Soft Sugar Cookies


1/2 C. butter
1 C. sugar
1 tsp. vanilla and almond extract
1 egg
1/2 C. sour cream or plain yogurt
3 1/4 C. flour
1/2 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. salt

Preheat oven to 375 degrees. Cream together butter and sugar until well blended. Add egg, vanilla, almond and sour cream. Continue mixing scraping sides of bowl.
Combine dry ingredients and add slowly to creamed mixture. Mix until combined. Wrap in plastic wrap and refrigerate for 1-2 hours.
Roll out to 1/4 thickness, place on cookie sheet and bake for 8-10 minutes.



Gingerbread

Thank you Martha Stewart for your gingerbread recipe. My husband will do practically anything I want (like the dishes) if I make these cookies. Seriously, he LOVES them and swears they are the BEST gingerbread cookies ever!

Ingredients:


5 ½ cups flour
1 tsp baking soda
1 ½ tsp salt
4 tsp ginger
4 tsp cinnamon
1 ½ tsp cloves
1 tsp nutmeg
1 cup butter
1 cup brown sugar
2 eggs
1 ½ cups molasses

Sift together flour, baking soda, salt, ginger, cinnamon, cloves and nutmeg. Beat together butter and sugar. Add eggs one at a time scraping bowl down in between. Add molasses and scrape down bowl again. With mixer on low speed add flour.

Chill one hour in the fridge.

Preheat oven to 350 degrees. Roll out dough on a well-floured surface until ¼ “ thick. Place dough back in the freezer for 15 minutes. Then cut with cookie cutters.

Bake for 12-14 minutes.

Zuchini Cookies

This is a Yummy Healthy Cookie. I eat them for breakfast!
You will need:

1 C. Butter
3/4 C. Honey
2 Eggs
1/4C. Plain Yogurt
1 tsp. each, cinnamon & Cloves
2 . Whole Wheat flour
1 tsp. baking soda
2 C. Rolled Oats
2 C. Raisins(optional)
1 1/2 C. Grated Zucchini

Preheat Oven 350 degrees F.
In a large bowl beat together butter, honey, eggs, sour cream, cinnamon and cloves.
Soft together flour and baking soda, and mix with liquid ingredients. Fold in oats, raisins, and zucchini Drop by teaspoons onto prepared baking sheet. I use parchment paper from Costco.
Bake until golden 10-14 min.
Cool or wire rack.
Enjoy
Makes about 4 Doz.
